It’s BBQ time and if you’re like me, you love a good veggie burger. Since most of the ones you find in the freezer section tend to be pretty flavorless, I’m going to share with you this recipe that will knock your socks off. Seriously, this is one of the best veggie burgers I’ve ever had. It’s a recipe created by an old friend, and now you can try it too. These burgers are a cinch to make. Just whip up the mixture, heat up the patties, and they’re great to eat right away, but you can also freeze them to heat up for later. To see the recipe read more. Spicy Chickpea Barley and Quinoa Veggie Burger recipe from an old friend Ingredients 1 small sweet potato, baked 1/4 cup dry quinoa 1/4 cup dry barley 15-ounce can garbanzo beans, rinsed and drained 2 tablespoons parsley 1 teaspoon cayenne pepper 1 teaspoon cumin 1/2 teaspoon salt 1/2 teaspoon pepper 2 tablespoons whole wheat flour 2 tablespoons olive oil 1 1/2 fresh red peppers Directions Peel, dice, and steam the sweet potato until soft. Cook the quinoa and barley in separate pots. Remove the stem and seeds from the red peppers. Cut the whole pepper in quarters, the half a pepper in half, and roast all six pieces in the oven or on the grill. While the grains and pepper are cooking, in a food processor, combine garbanzo beans, sweet potato, parsley, cayenne pepper, cumin, salt and pepper, flour, and one tablespoon oil. In a separate bowl, mix the bean mixture with the quinoa and barley. Using hands, form into six patties. Heat the remaining tablespoon of oil in a pan on medium heat. Brown both sides of each burger. Serve on a bun with melted cheese (optional) and a quarter of the roasted pepper. Back on Track: Grill Veggies For the Week

Summer weather is winding down, so it’s time to grill as much as you can before it gets too chilly. Since I don’t always have time to light up the grill after work, I like to grill up a bunch of veggies on Sunday so I’ll have extra for the week. They taste great on their own, mixed with pasta, as a pizza topping, or in a sandwich. All you have to do is wash an array of vegetables such as mushrooms, carrots, peppers, eggplant, potatoes, tomatoes, and zucchini. Then slice them so they’re still in big chunks since they tend to shrink once they’re cooked. Place the veggies in a big bowl and mix them with some olive oil, salt, and pepper. Then pour them into a grill basket and periodically stir them while they cook. After about 40 minutes, you’ll have savory, roasted veggies that melt in your mouth. Enjoy some for dinner and store the rest in the fridge in an airtight container.

If you can get over the difference in consistency (it’s a little spongier than a regular hot dog), than your heart and waistline will benefit greatly.
